This throw-together soup is perfect for fall weather. Because it’s pureed, it’s also a winner with kids! No big chunks of vegetables, just the sweetness of fall squash with a touch of maple syrup.
Don’t worry if you don’t have exact measurements of ingredients, or if you have one kind of sweet potato or another. This recipe is very forgiving. A little of this, a little of that, and you’ll have a nutritious soup for fall that’s packed with vegetables.
For serving: Ladle into bowls, swirl good olive oil on top of each bowl, swirl date syrup on top (can sub maple syrup), and sprinkle shards of fresh parmesan on top, with freshly cracked black pepper
