This hearty dish makes for the ultimate winter comfort food. Just don’t expect any leftovers.

Looking to fill the soul on a cold winter’s night? This “cheesy” potato casserole has all the warmth and cheesy goodness that the whole family will love. A great main or side dish, however it’s served. Just don’t expect any leftovers.

Plus, this recipe can be easily modified from vegan (V) to non-vegan (NV). Simply use real butter and substitute the nutritional yeast with dairy cheese.

  1. Preheat the oven to 450°F.
  2. Oil a large casserole dish and fill it with the sliced potatoes. Set aside.
  3. In a medium saucepan, melt the margarine over low heat. Add the flour and whisk it continuously to form a roux. Add the boiling water, soy sauce, garlic powder, turmeric, and salt, whisking continuously for 1 to 2 minutes until the sauce is thick and bubbly.
  4. Add the oil and nutritional yeast and whip again until smooth. Stir in the green chilies, if desired. Pour the sauce over the potatoes and stir thoroughly to coat.
  5. Sprinkle the top with paprika. Bake, covered, for 30 minutes, then bake, uncovered, for 30 minutes more, or until the potatoes are tender and the top is browned.
