Savor a sweet and spicy chili

Satisfy your appetite with a sweet and spicy chili full of flavor and nutrients! See what happens when sweet potatoes, lean ground turkey, corn, black beans and cumin come together on a chili winter evening.

Ingredients

2 tbsp. olive oil
1 small sweet onion, coarsely chopped
2 cloves garlic, crushed
1 lb. ground turkey
4 cups sweet potatoes, peeled and cut into ½-inch cubes
2 tbsp. chili powder
2 tsp. cumin
1 tsp. paprika, regular or smoked
2 tsp. salt
¾ tsp. pepper
1/8 tsp. cinnamon
28 oz. canned crushed tomatoes
1 cup chicken broth
15 oz. sweet whole kernel corn; fresh, frozen or canned (if canned, drain first)
15 oz. black beans, drained

Instructions

  1. Drizzle olive oil into a large saucepan or Dutch oven and sauté over medium heat for 2 to 3 minutes.
  2. Push onions to the side and add ground turkey. Cook over medium heat for 6 to 8 minutes or until the turkey is almost cooked through. Then, mash the cooked, ground turkey with a potato masher.
  3. Add sweet potatoes and sauté for another 2 minutes.
  4. Combine chili powder, cumin, paprika, cinnamon, salt and pepper in a small bowl.
  5. Pour crushed tomatoes, chicken broth and seasoning into the chili mixture. Mix all together thoroughly and reduce heat to low.
  6. Cover the pot and simmer for 20 to 25 minutes.
  7. Mix in drained corn and black beans. Cover and simmer for an additional 5 to 10 minutes. When the sweet potatoes are tender to the touch of a fork, the chili is ready to serve.
